Recipe of the week – Chicken Saltimbocca Skewers

These Chicken Saltimbocca Skewers are always demolished in a flash when cooked during our team cooking classes.

2 tablespoons olive oil
2 tablespoons chopped fresh sage
Salt and freshly ground black pepper
2-3 chicken breast fillets, skinless
12 thin slices prosciutto
Wooden skewers, soaked in cold water

Mix together oil, sage, salt and pepper. (to make 24)
Cut each chicken fillet into 6 long strips.
Mix sage oil and chicken together.
Cut prosciutto slices in half lengthways. (to make 24)
Lay out one slice of prosciutto and place 1 strip of chicken on top.
Thread prosciutto and chicken onto skewers.
Heat a large non-stick pan over a medium heat.
Cook skewers for 5-6 minutes on each side.
Place on a large platter to serve.
