Executive chef David Hall and his team work directly with exceptional farmers, fishermen and artisan producers in Tasmania, Flinders Island and King Island. Dani Valent – has more than 20 years’ experience as a food journalist, travel author and cookbook writer. Dani is also an experienced restaurant reviewer with local newspapers, food magazines and food guides. She loves drawing on all her various experiences to share stories, recipes, insights and excitement about the Australian food scene.
Max Allen – a wine and drinks columnist with over 20 years’ experience at The Weekend Australian Magazine, Australian Gourmet Traveller and The Financial Review. Max is also the author of numerous award-winning books on wine.
Richard Cornish – a senior writer for The Age Epicure and SMH Good Living and has co-written four books on Spanish food with MoVida chef Frank Camorra and consults to the Melbourne Food and Wine Festival.
