Melbourne's Restaurants reopen - June 1st 2020

After 10 weeks (which feels like 10 months) the culinary capital of Australia will begin to awaken on Monday June 1st. Tables have been set, menus written, new dishes created, home delivery favourites have been noted, staff are ready, everything has been sanitised and restaurant doors will reopen.

Reopen to new ways of dining as we take the first steps back. I for one can’t wait, and I’ve written a list of where I want to eat and also what I want to eat. Chefs have been busy since March and there are new dishes to enjoy across Melbourne. Plus signature dishes returning, and incredible ingredients utilised from farmers, fishermen, growers and producers.

Ensure you book as there are limited seats and walk-ins will be unlikely with restrictions in place.

BLUE D’AUVERGNE CHEESE SOUFFLE with witlof, pickled celery, candied walnuts & finger grape salad

SHIRAZ WAGYU CHUCK BEEF BOURGUIGNON with lardons, anise carrots, pine mushrooms & Paris mash

Two special dishes I have to highlight.

Bass Strait Scallops (from the Hardy Family), pan-fried with hazelnut oil, served with caramelized cauliflower, Jerusalem artichoke reduction, and house cured lardo made in-house from Scottsdale pork belly & jowl.

Eye Fillet & glazed Short Rib, the leanest, premium cut plus the sticky short rib on the same plate. served with beetroots poached in vanilla, a creamy pine mushroom duxelle, and a native muntries jus.
